Sizes and Slices
How big a cake do I need?
For most big events such as a wedding or the kind of function where you hire a venue
and have a full buffet, I would suggest you only cater for maybe three quarters of
the guests, as not everyone will bother with a slice of cake.

Cake Flavours
All sponges are a Madeira mix and each cake is split and generously filled with raspberry jam and vanilla buttercream.
The most popular flavours are still the plain madeira sponge closley followed by chocolate which of course comes with a rich chocolate buttercream.
For a change try a beautiful light lemon madeira where I replace the jam with lemon curd for a lovely refreshing tang.
How about my familys favourite chocolate orange marble cake or decadent coffee cake. Try my light fruit cake, a slightly spiced cake with just a handful of sultanas and some mixed spice or ring the changes with a coconut and cherry concoction.
For a more memorable and luxurious wedding cake you might like to vary the tiers how about one tier in a fruit cake, one tier in luscious date and walnut cake and maybe a little slightly spiced carrot cake on the top.
